We are familiar with food and wine pairings, and we are starting to explore food and beer pairings, but food and Baijiu pairings remain an almost unexplored territory in the West. Yet, this is one of the great surprises of this spirit: with its extraordinary aromatic richness, it pairs with an astonishing diversity of dishes, well beyond just Asian cuisine.

The first thing to understand is that Baijiu operates on a similar logic to wine: each style has developed in harmony with the cuisine of its region of origin. Sichuan cuisine, with its peppers and chilies, is its natural territory, but it ventures well beyond: a well-spiced Indian curry, caramelized pork ribs, or even Texan barbecue are perfect matches.

"Sauce aroma" (jiang xiang) style Baijiu is a category apart. With its more than 300 identified aromatic compounds and its deep umami dominance, it seeks partners of equal standing. Smoked or dried meats, grilled Korean dishes, and fermented preparations also make remarkably good pairings.

Specialized New York establishments even organize Baijiu and cheese pairing sessions, with growing success. Finer and more floral, it naturally finds its place alongside delicate dishes: steamed fish, poultry, dim sum, light appetizers, seasonal salads, or vegetable dishes with fresh herbs. Experts often recommend starting with it to discover Baijiu and food pairings.

A few principles to remember

Baijiu cuts through fats and cleanses the palate between bites, making it an excellent companion for long and generous meals. It tolerates and even enhances spicy, salty, and fermented dishes. On the other hand, very sweet dishes may clash with its alcoholic power, as might overly delicate preparations that could be overwhelmed by its assertive personality. As with wine, the best pairing is the one you discover yourself, by daring to experiment.
