Baijiu: How the World's Most Consumed Spirit Is Becoming a Luxury Star

Billions of liters produced each year, more than any other spirit in the world: Baijiu is, by far, the most consumed distilled beverage on the planet. And yet, outside of China, almost no one has heard of it. Driven by a colossal domestic market and a thousand-year history, this national spirit is now beginning to cross borders and even establish itself as a new symbol of prestige.

The secret to its production: the role of Qū

Baijiu, whose name literally means "white alcohol," is distilled from fermented grains such as sorghum, rice, wheat, or corn, depending on the variety, to produce a potent spirit, between 40 and 60% alcohol. Unlike whiskey or vodka, which are made from liquid fermentation, the best Baijius rely on solid-state fermentation, in earthen or stone pits that can be centuries old.

At the heart of this process is "Qū" (曲), a natural ferment prepared artisanally that captures the yeasts and microorganisms specific to each distillery's environment. This is what gives each Baijiu a unique aromatic signature, linked to its terroir.

An extraordinary aromatic profile

For a Western palate, the first tasting can be disconcerting: the taste of Baijiu is unlike anything familiar, far from the standards of cognac or bourbon. Experts classify Baijius into several major aromatic families, such as the "sauce" (jiang xiang), "strong" (nong xiang), or "light" (qing xiang) families.

The "sauce" family is considered the most complex and sought-after, with over 300 identified aromatic compounds and a dominant umami, that famous "fifth taste" which gives it a very particular long finish.

A symbol of prestige and investment

Baijiu is no longer just the drink of traditional banquets. The premium segment of this spirit is experiencing unprecedented stock market valuation, surpassing groups like Diageo or LVMH. Some exceptional bottles can reach several thousand euros on the secondary market, and rare flasks fetch premium prices at international auctions.

For a portion of the Chinese elite, prestige Baijiu has become a true collector's item and investment, much like a great Bordeaux wine.

From the Chinese table to bars around the world

Traditionally, Baijiu is drunk at the table, in small glasses consumed in one gulp, as an accompaniment to the meal. But a new generation of bars and restaurants, from New York to London to Paris, are beginning to embrace it. Its aromatic power makes it a prime ingredient for bartenders seeking new sensations, who use it to add depth and complexity to classic cocktails.

Baijiu's journey to the West is just beginning. Between its millennial heritage and new international recognition, this little-known spirit could well become, in the coming years, one of the most sought-after by connoisseurs in search of rare discoveries.
